Salon is unique champagne. All the emphasis in the production of this exceptional wine is on the singular. It was originally the product of one single man, Aimé Salon; from one single region, the Cote de Blancs; from one single cru, le Mesnil-sur-Oger; from one single grape variety, Chardonnay; and from one single vintage, with no blending whatsoever.

“Champagne is certainly extremely individual: very tense and tight-knit with a sort of filigree texture, athletic rather than
corpulent - really quite delicate with an exotic whiff of incense. It would make a super-luxurious aperitif (I can't quite see it
being substantial enough to drink with food) at any point over the next five to 10 years, I would have thought. It's rather a
ballerina whereas the 1999 waiting in the wings sounds a bit of a boxer.”
