Salon is unique champagne. All the
emphasis in the production of this exceptional wine is
on the singular. It was originally the product of one
single man, Aimé Salon;
from one single region, the Cote de Blancs; from one single cru, le Mesnil-sur-Oger;
from one single grape variety, Chardonnay; and from one single vintage, with
no blending whatsoever.
Uniqueness is also perfection: nothing can be left to chance
in order to obtain the exceptional wine that is Champagne
Salon, and to take advantage of what nature, the soil and
the climate give us: purity, character and individualism
in the wine that needs careful nurturing so that it blooms
after long years of ageing.

Salon 1997
• “Champagne is certainly extremely individual: very tense and tight-knit with a sort of filigree texture, athletic rather than
corpulent - really quite delicate with an exotic whiff of incense. It would make a super-luxurious aperitif (I can't quite see it
being substantial enough to drink with food) at any point over the next five to 10 years, I would have thought. It's rather a
ballerina whereas the 1999 waiting in the wings sounds a bit of a boxer.” Jancis Robinson - JancisRobinson.com - June 2008
• 93 points "Subtle ginger, floral and citrus aromas build to flavors of lemon pie, honey and hazelnut. Elegant and refined, with
a firm underlying structure and a long aftertaste. Drink now through 2020." Bruce Sanderson Wine Spectator - June 2008
• 97 points “A fantastic drink if someone else is paying. Compared with the ’96, this is very approachable. It’s an essay in
harmony, with fine fruit and lively acidity, finishing very dry but smooth and beautifully balanced. Now to six years”
Huon Hooke – Best Sparkling – Good Living – SMH 9/09/08
• ***** "The 1996 is far too young yet, but he ’97 already shows a velvety beautiful grace and a spinglike freshness. Salon
is without any doubt a five star producer” Richard Juhlin Champagne Guide 2008
